Giroud put France ahead in the 44th minute, heading home from close range after Ousmane Dembele's cross. Mbappe doubled the lead in the 74th minute, finishing off a fine move involving Theo Hernandez and Antoine Griezmann.
Poland pulled a goal back through Robert Lewandowski in the 90th minute, but Mbappe restored France's two-goal advantage in the 91st minute with a stunning solo effort.
